Ingredients
- 1 ¼ cups all-purpose flour
- 2 tablespoons grated Parmesan cheese
- 1 teaspoon freshly ground black pepper
- 7 tablespoons unsalted butter, cold and cubed
- 5-7 tablespoons ice water (measure the cold water and add ice cubes to it)

Instructions
- Ensure the butter is cold and cubed. Gather all-purpose flour, grated Parmesan cheese, and freshly ground black pepper.
- Use a food processor with a dough blade to pulse together flour, Parmesan cheese, and black pepper until combined.
- Introduce cold, cubed butter and pulse until the mixture resembles crumbs.
- Add ice water, one tablespoon at a time, pulsing until the dough comes together.
- Transfer dough to a floured surface, shape it into a disc, and wrap in plastic wrap. Refrigerate for at least 30 minutes.
- Roll out the dough on a floured surface to fit your pie dish. Place it in the dish, trim excess dough.
- Refrigerate the dough in the dish while you prepare your pie filling.
- Optional: For pie recipes with particularly liquid-y pie fillings, you may want to pre-bake your crust. First, fill the pie with pie weights or dry beans set aside for this purpose and cover the edges of the crust with aluminum foil to avoid the crust premature browning.
